Simon Rouillard is a young winemaker in Anjou. Previously having worked with La Grange Aux Belles, Domaine de la Tournelle, Philippe Bornard, Frederic Agneray, Ratapoil, Les Bottes Rouges, Babass, and Nicolas Grosbois, Rouillard now farms and vinifies 2 hectares in Anjou. Simon also has a négoce project sourcing from Frederic Agneray in the Gard.

Bulles 2023- 100% chenin from the first pick, aged on the lees and released in the traditional way, Undisgorged.
'Tout Seul Les Deux' VdF 2023- Grolleau Noir & Chenin Blanc, The Chenin pressed direct and the Grolleau macerated in the juice.

'Septembre' VdF 2022- 100% Chenin Blanc with a longer elevage.
'Minuit" VdF 2023- Gamay 70%, Chenin 20%, Grolleau Noir 10%. The grapes were co-fermented for 8 days together in whole bunches, with a light foot-pressing, then aged in tank.
'Apres la Pluie' VdF 2023 - 100% Grolleau Noir from very old vines that Simon farms, given a 14 day maceration in whole bunches.
