SRC is an acronym for the family Parasiliti. Rori the winemaker, his wife Cinzia and their daughter Sandra.  The winery is located just a 10 minute drive east from the charming city of Randazzo.

Their vineyards are farmed organically, with very old vines located from 650 meters up to 1000 meters in altitude stretching east to west along the northern slopes of Etna. They work with little intervention in the vineyard and in the cellar.  That allows the wines to express their true volcanic terroir, thanks in no small part to the age of the vines (between 50 - 120 years old).  Above all, the rich igneous-rock-laden soil where they are grown, imparts the vibrant, mineral energy that makes these wines so unique. The Etna region and its microclimate, define balanced wines with great drinkability. They farm several different grapes such as Nerello Mascalese, Grenache, Carricante and Grecanico.

WINES
SRC Etna Bianco
Carricante with a little Grecanico from two parcels: Crasà (old with igneous rock and more topsoil) and Calderara (stonier).  The youngest vines are 70 years old. Bottled in April with 12/14 hours maceration before pressing and very little pressure all in cement.  Great acidity and depth; Guilhaume says they remind him of Belluard but with a more noble cépage 

SRC 'Rinazzo' Etna Bianco Superiore 2023
100% Carricante from northeast facing vineyards, the only one facing the sea at 940 meters elevation (DOC Superiore terroir, he just didn't go for it this vintage).  An absolutely incredible wine with astonishing clarity done in stainless.

SRC 'Pirao' Etna Bianco
90% Carricante, 10% Grecanico from 70 year old vines at 1000 meters elevation.  From Rori’s favorite vineyard, which is in the woods. The previous owner was a visionary because he planted white when everyone planted red. It’s the last harvest of the vintage, done in the last week of October.  It’s a wine to age. No contact with oxygen during vinification (stainless).  More high toned notes when compared to the other wines.

SRC Etna Rosso
90% Nerello Mascalese and 10% 120 year old co-planted Nerello Cappuccio, Minella Bianca, and Sangiovese.  Destemmed, two pressings into 15hl foudres.  Maceration for 3-4 weeks on the skins, free run into stainless and pressed, then goes into botte (25hl) and after malolactic fermentation is aged in cement until bottling.

SRC "Rivaggi"
80% Nerello Mascalese, 20% Alicante from Northwest facing vineyards at 930 meters elevation.  It’s the costliest vineyard, the last of the red vines harvested.

SRC Alberello
Nerello Mascalese from very old (125 years) bush-trained vines in Crasà on the northern slope of Mount Etna.  Volcanic soil, but older and softer, which gives it a lighter volcanic profile (read: peppery).  Fermented in open top oak vessels and then aged in concrete.  Aged for some time in bottle before release.

SRC Barbabecchi
60/70 year old vine Nerello Mascalese from very old igneous rock with less top soil, nutrient poor soils, North/Northeast facing vineyards at 900 meters elevation.  It has direct sun exposure all day morning to night and there’s a wind tunnel making.  It’s the grand cru of Etna ; just beautiful, important wine.  Fermented in open top oak vessels and then a sputnik (klever), a spherical concrete tank.  Then aged over two years in bottle.

SRC Rosato
80% Nerello Mascalese, 20% Insolia Minela, from 750-1000 meters elevation.  Destemmed and then 6-7 hours in the press before both free run and pressing into stainless.​
